Rice University chefs took their best beet cakes and tofu tacos to the annual Best Campus Food Celebration March 28 at the University of Massachusetts, Amherst. Chefs from six colleges and universities that earned “Best Campus Food” recognition in the 2018 edition of The Princeton Review’s rankings were invited to participate, including St. Olaf College, Virginia Tech, James Madison University and Cornell University. Rice Director of Campus Dining Johnny Curet and senior executive chefs Roger Elkhouri and Kyle Hardwick prepared 600 2-ounce servings of Rice favorites — including cinnamon rolls and hummus — and fed UMass students during a dinner. Susann Glenn, manager of communications for Housing and Dining, also took an assortment of Rice’s popular “servery stickers,” which went as quickly as the food.
